Heirloom tomato sandwich must be the easiest and most wonderful summer snack of all times. It takes 2 minutes to make, no dishes, no cooking, and no mess, no fuss. All you need is a loaf of your favorite bread (I prefer a multigrain one), butter or cream cheese, heirloom tomatoes and sea salt. Tomatoes love salt, so don’t skip the salt. Fresh thyme would be lovely, too.
It’s summer and it’s hot. This is not time to spend an afternoon cooking. It’s time to go back to basics. The good news is that tomatoes are juicy and bursting with flavor these days. That is actually a very good news here where I live, in the Toodler Land, because one of three things that my son will put in his mouth these days are tomatoes. The other two are bread and potato.
As I was standing in my kitchen the other day staring at tomatoes, bread, and potatoes and wondering what could I make with those, I recalled my favorite summer snack: heirloom tomato sandwiches! Growing up, summer time meant playing outside all day long and devouring open face heirloom tomato sandwiches in the afternoon. The best thing is that this healthy snack does not require any cooking or baking. Still, if you really, really feel like cooking or baking something, you could make the bread yourself. Serve these easy heirloom tomato sandwiches as an afternoon snack or even for breakfast, it’s summer after all! If you’re traveling this summer, they are a great travel snack too. Bring pre-sliced bread, tomatoes, butter and salt with you and assembly the snack on the road. You could even add a slice or two of prosciutto to make this a light lunch!
To make heirloom tomato sandwiches, you will need:
- A cutting board
- Bread
and butter knife
- 4 slices of bread
- 2 heirloom tomatoes, sliced (about 8 thicker slices)
- 3-4 tablespoon butter
- pinch of sea salt
- 2 sprig fresh thyme
- Spread about 1 tablespoon of butter on each slice of bread. Top with two slices of tomato, sprinkle with sea salt and fresh thyme. Eat!
