Why I Shop at Kroger?
First, let me tell you a little story. This last summer something happened in my neighborhood. There was a rumor and people were getting excited, everyone was talking about a new Kroger store down the road. Being new to Texas and having never shopped at Kroger, I hardly understood all the buzz. Then, a Kroger store opened and I was hooked.
The fact that they have their own product line, Simple Truth ®, and that they have an organic option for almost everything I buy, won me over. They have an amazing line of snack products for those busy days when you’re on the go. Even better, these can easily be turned into delicious recipes like the ones I’m sharing today! Kroger quickly became my one-stop store for all my weekly needs. Truly, I am a real-life fan who finds everything at Kroger. Hey, I even found new glassware featured in this post for the brunch I threw for a few of my fellow moms.

Stuffed Mushrooms with Quinoa and Beef Jerky
Stuffed mushrooms are filled with cheese, cooked quinoa, and barley and topped with Simple Truth organic beef jerky that is wonderfully smoked.
While you’re at Kroger, grab a bag of Simple Truth Organic white quinoa and barley cooked with olive oil and sea salt from the freezer to make this recipe super easy. That way you don’t have to spend 30 minutes cooking quinoa for this recipe. The Simple Truth brand also has organic mushrooms and cheese, which makes this brunch extremely convenient.
Creamy and Light Deviled Eggs
Deviled eggs are creamy and light thanks to Greek yogurt, and surprisingly flavorful thanks to chopped organic beef jerky that’s combined with fresh oregano and dried dill.
If you’re really in pinch for time, Kroger also carries Simple Truth Organic peeled hardboiled eggs. Could it be any easier?
A Fruity Honest Iced Tea Punch
Finish it all off with an easy fruity iced tea punch made with Honest Tea® Organic Honey Green Tea mixed with pear juice and spiced with warm star anise flavors.
Honest Tea products are my go-to products because:
- it’s convenient to have bottled tea you can trust on hand
- I know it’s honest, real tea brewed with real and Fair Trade ingredients
- it’s organic which means it’s ingredients haven’t been treated with or exposed to harsh chemicals
You could go with any flavor, even with their unsweetened tea, but Honey Green Tea goes so well with pear and star anise that I couldn’t pass it up.
Finally, while you’re at Kroger, grab Simple Truth organic baby arugula to use as a garnish or bed for your mushrooms and eggs. You will also need some pears; I prefer firm Bartlett pears for this occasion. Use some to garnish the punch and chop the rest for your guests to munch on along with the savory appetizers.

Easy Brunch Menu
Ingredients
Deviled Eggs with Beef Jerky and Fresh Oregano
- 6 large eggs preferably organic
- 1/4 cup Greek yogurt
- 1/4 cup Simple Truth Organic beef jerky (original flavor) chopped
- 2 tbsp Simple Truth Organic beef jerky (original flavor) sliced for garnish
- 1/2 tsp Dijon mustard
- 1/2 tsp dried dill weed
- 1 tsp sea salt optional
Stuffed Mushrooms with Quinoa and Beef Jerky
- 2 tbsp olive oil
- 1 lb whole mushrooms preferably organic
- 2 cloves garlic
- 3/4 cup cooked quinoa and barely Simple Truth Organic
- 1 tsp dried parsley
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 tbsp Swiss cheese grated
- 1/4 cup Simple Truth Organic beef jerky (original flavor) chopped
Fruity Honest Iced Tea Punch
- 2 small Bartlett pears
- 2 small star anise
- 10 ounces pear juice
- 32 ounces Honest Tea Honey Green Tea
Instructions
Deviled Eggs:

Place eggs in a medium pot and cover with cold water by 1-2 inches. Bring to a boil then remove from the heat and set aside 12 minutes. Drain, cool under running cold water, crack on each side and roll against the counter to loosen up the peel. Peel and slice in half. (Start on the mushrooms recipe while the eggs are cooking).

Using a small spoon, remove yolks from the egg and place in a small bowl. Mash well. Add Greek yogurt, beef jerky, Dijon mustard, dill and half of the fresh oregano. Combine well. Taste and add salt if needed.

Place egg whites on a flat surface and stuff with yolk mixture. Use a small spoon to fill the egg whites and spread the yolk mixture evenly across the surface. Garnish with sliced beef jerky and remaining fresh oregano leaves. Keep refrigerated until serving.
Stuffed Mushrooms:

Preheat oven to 375°F and line a baking sheet with parchment paper. Heat olive oil in a medium skillet.

Rinse mushrooms and remove stems. Place mushroom caps on a lined baking sheet and chop the stems and garlic.

Sauté mushroom stems and garlic until stems are soft and garlic releases its flavor. Add precooked quinoa and barley, parsley, salt, and pepper. Sauté until golden, then remove from heat.

Spread Swiss cheese among mushroom caps then top off with sautéed quinoa mixture. Bake at 375°F for 20 minutes. Remove from the oven and garnish with chopped beef jerky. Keep at room temperature until serving.
Fruity Iced Tea Punch:

Pour half of pear juice and star anise in a medium saucepot. Bring to simmer and let simmer about 10 minutes to infuse the juice with the spice. The juice will thicken and reduce. Remove from heat and let cool.

In a pitcher, combine cooled infused pear juice, pear juice, and chilled Honey Green Tea. Serve over ice and garnish with pears and star anise.
Recipe Notes
To cut the time in the kitchen, purchase Simple Truth organic precooked quinoa and barley (in the freezer section).
Precook and peel eggs ahead of time and store tightly covered in the refrigerator.
Infuse pear juice with star anise ahead of time and then just mix with Honest Tea Honey Green Tea before guests arrive.
Tip: Get extra Simple Truth Organic beef jerky because it will go fast! (Plus that way you’ll have extra for snacking!) I like to have at least two 3-ounce bags on hand.
